Signature Dishes

Watermelon Salad

Cylinder of watermelon, marinated with bagna caoda on panko fried, topped with a lettuce salad frisee, arugula and asparagus, finished with goat cheese quenelle of oil and dust bagna caoda.

Chilean Sea Bass

Smoked sea bass with pineapple, fennel & orange.

Hamachi Steak

Hamachi steaks marinated in chilli oil, lemon juice, together with cubes of avocado and edamame, topped with seaweed salad and mayonnaise together with shirasha.

Beef Veal Cheeks & Shrimp

Braised veal cheeks, accompanied by salsa puree, morels to the pan, shrimp and port sauce.

Sealed with Pepper Quail Arabic, Strawberries Gel and Lichi Stewed

Gel drops strawberry, lichi puree, quail sealed with 5 spaces, accompanied by salsa, quail and rose petals.
