Kamena is the distillation and new direction of Montenegrin gastronomy. Taking its title from ‘stone’, it is a tribute to the ancient masonry of the fort and the rugged mountains that frame the horizon and inform the menus.
Open for breakfast through to dinner, every plate is an anchor to the land. From the morning’s local cheeses and homemade ‘sour’ milk, to an evening of saffron risotto and roasted lamb loin.
As the harvest shifts, so does the menu, ensuring the Adriatic fish soup, Njeguši beef tartare, and Mediterranean grilled octopus are served only when their ingredients demand them to be so.
When the sun crosses the terrace, the smoked traditions of the Njeguši mountains meet the clarity of the Adriatic. At first to honor the past, then to reshape what Montenegrin cooking is today.
