SEVEN CHOCOLATE CONFECTIONS — AUTUMN IN EVERY LAYER

Japanese chestnut, persimmon, sweet potato and pear anchor seven courses of chocolate sweets shaped by the season.


A baked chestnut pudding arrives with yuzu chocolate sauce; a tart layers persimmon, apple and sweet potato over cacao-infused almond pastry, the fruit's sweetness deepening through every bite. A chestnut-shaped mousse pairs the delicate depth of waguri with gentle milk chocolate. Pear yokan meets ganache; fig and cacao-pulp jelly sits alongside autumnal fruit.


Monaka chocolate florentine adds crunch, while a black-truffle sablé shaped as ginkgo and maple leaves closes the course with savoury elegance.

The savory tier is entirely the work of our washoku kitchen.


Taro dressed with zunda, dried persimmon paired with sour cream, chicken matsukaze, sweetfish simmered in sweet soy, steamed kenchen vegetables, candied chestnuts, miso-marinated herring roe, smoked salmon with cream cheese, candied walnuts, lotus chips and a sesame-tofu vegetable soup — each piece reflecting the season.


At the charcoal station, guests grill their own mochi over live flame and finish it two ways: mont blanc cream for sweetness, maitake-mushroom butter miso for umami.
