Every Fushi Kaiseki begins with a composed appetiser plate that maps the season in miniature — a mosaic of textures, temperatures and colours drawn from Kyoto's markets and nearby waters. A clear soup follows, its dashi built on five-year-aged Rishiri kombu layered with katsuobushi and maguro-bushi, cradling a single seasonal centrepiece. The sashimi course then arrives with restrained garnish and soy, letting each cut speak for itself. Together, the opening trio sets the tempo: light, precise, unhurried.
The middle act belongs to technique. A thick-cut fillet of Japanese black wagyu meets the binchotan grill, emerging with a bronzed crust and a deeply flavoured centre — seasonal vegetables and spice accents shifting with the calendar but always in service of the beef. A hot course follows: a delicate preparation shaped by the kitchen's attention to texture and temperature. Then comes a lightly fried course — prawns or seasonal ingredients in a crisp, clean batter, finished with nothing more than fine Kyoto salt. Three disciplines, three paces, one kitchen's command of heat.
The final movement slows. Steamed rice arrives as a satisfying composition of seasonal ingredients and slow-simmered flavours, accompanied by miso soup and house-made pickles — a moment of honest, comforting simplicity that anchors the entire meal. Dessert brings a chilled seasonal confection to leave the palate cool and refreshed: a quiet full stop to a Kyoto evening, shaped entirely by what the season offers.
